Hello, weekend!

Hey hey hey :D It's FRIDAY! After a really long week, it feels sooooo good to get a break from the grind.

This morning, I slept in (which was heavenly), then had my standard protein oats for b-fast

-1/3 cup oats

-1 small mashed nanner

-1/2 scoop chocolate protein powder (Designer Whey)

-cinnamon and vanilla extract

-less than a tbs of AB

and Creme Brulee coffee :D

I finished the last bit of the project I've been working on (which I can finally reveal tomorrow. Hint: It's pumpkin-flavored), then munch a Chai Kardea bar while I drove to pick up Renee and give her a ride to base.

I love all things Chai-flavored and I adored this bar. The only thing is that I was starving not even an hour later....

When I got home from the commisscary (with ingredients for Sunday's Taco night), I had 2 AB-stuffed dates:

I cleaned the casa a little, did some homework, and decided to break out this week's BSI ingredient for lunch and made...

Eggplant Pizzas!!!

Not anything too crazy, but I was really craving pizza!

I sliced up the eggplant, sprayed with nonstick spray and seasoned it with sea salt, pepper, thyme, garlic and oregano

Grilled on the Georgia Foreman for 3 minutes

Topped with no-sugar-added marinara, shredded raw goat cheese and fresh basil.

It was such a delicious lunch! Afterwards I was perfectly satisfied-- the fine line between slightly hungry and uncomfortably full.

This afternoon, I took the day off from the gym since I'm running the 10k tomorrow, and did some yoga instead. I put on my Tao CD (from Bed, Bath and Beyond) and gave myself a 40 minute yoga class. It felt nice to stretch and even though I'm not a huge fan of yoga, I do appreciate the meditative benefits.

I loved the texture of this! Most fruit leather is kind of hard to bite into and extremely chewy-- not this! It was soft and delectable. Mental note to buy a lot of these next time I'm at Whole Foods.

Tonight, we surprised my friend AJ-- she's getting married in December (in Vegas, baby!) and Renee is throwing her bridal shower tomorrow. She had no idea, until tonight, when we asked her to meet us for dinner and her mom, grandma and future mother-in-law were there, too! She had no clue they were coming into town, so it was fun to surprise her.

We went to Taste of New Orleans, which is one of the very few things I'll miss about Valdosta. The food is outta control delicious, they have live music on the weekend and the owner walks around and talks to almost everyone who dines there.

I had a glass of Shiraz, grilled tilapia and red beans and rice (without meat and without rice.. so just red beans)

I also had 3 bites of the bread pudding.. which rocked my face off

It's funny how I won't touch white bread to save my life, but I'll totally sneak bites of bread if it's covered in rum sauce :D It's not the same, right? Haha

We're all running the 10k in the morning and AJ's shower is in the afternoon :D

I'm off to watch 27 dresses on the couch in my jammies, and calling it a night early so I have energy in the morning! My goal is to run it in under an hour, which I think is feasible. We shall see....

Ooh, a pumpkin surprise! I'm v. interested.
I also love the eggplant pizza. The other day Caitlin made polenta pizza. You ladies are so smart!

I loved the chai kardea bar, too! Those Kardea bars kept me pretty full for a bar. We're all differrent I guess!

Those eggplant pizzas looked delicious. I love eggplant!

I live in New Orleans and the restaurant you went to sounds fab! It was surprising to read the article about it and see that it is authentic Creole food. So many restaurants claim to be New Orleans influenced and to me the food is bland and no where near what our food is like down here!

great eggplant creation!!! i'm craving pizza now..... and so funny what you say about white bread, i'm all for using minimal sugar when i bake, and in everyday life generally - but when it comes to sugar in ice-cream? really doesn't count, you can't even see it!!
